Dayton Callie stammt aus Schottland, wo er 1946 in Dumbarton geboren wurde. Er spielte größere Rollen in zwei Serien von David Milch: "Deadwood" und "John from Cincinnati". Zusammen mit dem "Deadwood"-Ensemble erhielt er eine Nominierung für den Screen Actors Guild Award.

In Kurt Sutters "Sons of Anarchy" war er als Chief Wayne Unser zu sehen und gehörte dort seit der dritten Staffel auch dem Hauptcast an. Dem Serienende wurde es erstmal ruhiger um Callie, bis er die Rolle als Jeremiah Otto Sr. in der AMC-Serie "Fear the Walking Dead" übernahm.
